Mixing your burger meat: In a cold mixing bowl combine the ground rabbit, chopped bacon and the salt. Mix thoroughly by hand for 5 minutes and then place this bowl in the refrigerator for 15 minutes. This step is crucial to allow the salt to extract the protein needed to bind the burger effectively. Remove from the refrigerator and add the black pepper, minced garlic, and chopped parsley. Mix thoroughly by hand for 1-2 minutes until all ingredients are well combined.
|
Prep your grill |
Preheat the grill to a medium-high heat or use one chimney of charcoal, about 3lbs of briquets. Use a stiff bristled brush to clean the cooking grates and wipe with a small amount of oil to prevent sticking. |
|
Portion your burgers |
Divide your burger meat mixture into quarters and shape to your desired thickness. This will provide roughly four 1/3 lb patties. Reserve in the refrigerator until ready cook. |
|
Make your burger sauce |
In a bowl combine the mayonnaise, ketchup, mustard, chopped pickles, pickle juice, and smoked paprika. Mix thoroughly and refrigerate for 30 minutes to allow the flavors to meld before using. |
1. Grill the Burgers: Working with a pre-heated grill or over an even layer of hot charcoal, use a spatula to place the portioned and shaped 1/3 lb patties over direct heat. Grill the patties for 1 ½ minutes and using your spatula, turn the patties 90 degrees and cook for 1 ½ minutes to create cross-hatched grill marks. Flip the patties to the uncooked side and repeat the process for a total cooking time of 6 minutes. Use a thermometer to measure the temperature of the patties and remove from the heat when they reach 155 degrees. Allow the patties to rest for 3-4 minutes.
2. Toast the Buns: While the patties are resting, toast the sesame seed buns for about 45 seconds or until evenly toasted.
3. Assemble and Serve: On your warm and toasted bottom bun, layer the green leaf lettuce, the freshly sliced tomato, and the grilled rabbit-bacon pattie. Apply 1 tablespoon of the classic burger sauce to the top bun and place it on top of the Pattie. Serve and enjoy!
